For those of you who have ever been to the Middle East or anywhere else in the world for that matter, probably had chicken shish kebabs in your pita. Below is a recipe that you can barbecue or cook inside on your grill pan. 

12 Chicken Thighs (Dark Meat) 
3 onions, sliced (Sliced in order to hang on the skewer) 
6 garlic cloves (Thinly cut or chopped) 
1/2 cup of vinegar 
1/4 cup of water
1/2 lemon 
Salt & Pepper
Optional: bay leaves, oregano, other spices

Mix the ingredients, and let it marinate in the fridge for at least 2-3 hours, it’s best if you leave it overnight. Put chicken and onion through the skewer and cook until it’s finished. You can top it off with dill, oregano or parsley. Feel free to put it into a pita or add potatoes on the side.
